O’Reilly Granola

Preheat oven to 315
Toast 3 C of whole oats on your largest cookie sheet with sides
15 mins - 7 mins, mix, 8 mins, take out

Meanwhile, mix:

1 C sunflower seeds
1 C slivered almonds
1 C coconut
1.5 C wheat germ
1 C flaxseed meal
.5 C powdered milk 
(I’ve skipped this, but it makes it better)

In a large measuring cup, mix:

.5 C oil
.5 C honey
.5 C light molasses

& microwave these three for 1 minute or until molasses looks like a lava lamp, pour over, then mix in well with the dry ingredients and the oats. Coat well, then back on the cookie sheet it goes.

Back in the oven for 15 mins - 7 mins, mix, 8 mins, take out

Mix in 1 C dates (or cherries or raisins or your fav dried fruit)

Stir while it cools.

Notes: this recipe is easily doubled and very flexible. Play around with it a little to get it how you like. Slightly more honey & molasses=chewier, and vice versa.

Local (& quick) Apple Crisp

I threw together a quick apple crisp (photos nearby), no recipe, by just layering the following ingredients (all approximate) over 8 chopped, unpeeled apples that came in my farm share this week.

(I used an 8x8 pan,  use 12-14 apples in a 9x13 cake pan)

- 1/2 C white sugar

- 3 splashes of vanilla

- 4 T flour

- 2-3 C oatmeal (I like a lot of crisp)

- 1/2 C brown sugar

- 1/2-3/4 stick of butter, grated

Cinnamon

Oven - 400º for 45 minutes to an hour until it’s crispy and lightly browned.

The finished product! I love how leaving the peels on adds a gorgeous crimson color.

Remarkable

There is a certain sort of woman who is remarkably without artifice and remarkably without fear, who is made uncomfortable by polite lies and deceptions, who refuses to face the world any way but straight on and who once she discovered there was nothing to hold back or hide or disguise shone so brightly people found themselves blinking a little when they first meet her.

I found this on the back of a Crystal Gayle album while going through stacks of vinyl at a friend’s parent’s house in Nisswa, MN this past summer.
